why are Rishonim so harsh with one another on their opponents Pshat? [closed]

When we see 3 rishonim arguing we always say that they are both right. Eilu VeEilu are the words of God. So why when they argue do the say the the other pshat is rubbish, perhaps they dont agree but if the other person is a Rishon what he says must be right as well?

When defending the Torah we are supposed to be hot headed and intense - I am sure that when Shammai and Hillel had all their arguments there was much screaming and yelling YET we say that their fights wee never personal only for the sake of true Torah learning - As a a side point my favorite of all the name calling - see Eben Ezra on Possuk that describes Leah's eyes - he brings a different interpretation from the Ben Efraim and has a good line.

There is a Sefer from the Chofetzh Chaim to deal with all these things! Cant remember the name though
